The wine production facilities include 6 vats with a capacity for 50,000 litres and 3 vats with capacity for 25,000 litres.
The ageing cellar currently has a stock of almost 1000 medium-toast French and American oak barrels.
The wine tasting room, where design takes the limelight, is in contrast to the other classic styles characterising the winery. The winery has two dining rooms and the relevant working and office areas.
In Bodegas Fuenmayor, the wines are selected and handled naturally, at leisure. This ensures that they are gradually enhanced with the characteristics which distinguish them and, little by little, they continue to develop until the resulting wines bring together the best to produce a product unique in its presentation and excellent as a whole bearing the hallmarks of quality and, above all, the know-how of the winery team.

The application of a continuous improvement philosophy exhaustively controls all the processes involved in production, ageing and the marketing of the wines.
Wines considered appropriate for ageing are those which stem from fine varieties, as is the case of Tempranillo. These grapes are cultivated in suitable climatic and soil areas and have undergone the first phases of the winemaking processes accordingly with intense maceration. The objective of this is to increase the content of extractive substances, primarily anthocyanins and tannins, resulting in harsh younger wines which refine with age.
This ageing process is comprised of two phases. The first in oak barrels in a moderately oxidative atmosphere to which the generic term "Crianza" is applied, and a second phase of bottle ageing in a reductive atmosphere to which the term "maturation" is applied.
All of our Nocedal wines undergo these two phases and are subject to the strictest monitoring procedures, thus ensuring the optimum conditions and times which guarantee their unbeatable quality.
