MATURING AND AGEING
The vines which produce this wine belong to exclusive local growers and are mostly over 20 years old. We closely monitor their cultivation, analysing the phenolic and sensory ripening. The grapes are harvested by hand so as to avoid undesirable prefermentation or oxidation of the must. 50% of the stemming and crushing is controlled so as to achieve better treatment of the grapes and the other 50% is fermented using the carbonic maceration method of the whole clusters.
TASTING
Intense violet in colour with deep robe, starbright and good legs. Aromas of red berries, liquorice and lactic aromas typical of the malolactic fermentation process. A balanced, appetising, velvety wine, with an intense aftertaste.
ON THE TASTING
During the sensory analysis conducted during tasting, a complex set of abilities are involved which we can all, whether professional or amateur, develop with time and practice. It is enough to have a certain intuition, concentrate on the sensations you perceive and analyse them with the instruments and checklists of the tasting technique, using the fascinating archive of colours, smells and tastes acquired through previous tasting experiences. It makes a magnificent match for red meat, game dishes, cheeses and desserts.
